What Can You Make With Dried Vegetables?
Those crusty, wrinkled, hard, little pieces of what used to be fresh vegetables are more versatile than you might think, except for the potatoes. I was right they were wrong.
My mistake is I diced the potatoes and I should have cut them in thin slices. The center of the cubes of the potatoes just won’t cook. I’ll try again with slices and see what happens.
Use the other dried veggies in soups, stews, casseroles, and chili, just about anything that you would add fresh vegetables to.
I made a quick homemade soup by adding the veggies to chicken stock. If you wanted to have quick meals on hand. Add 1 cup of dried vegetables, 4 bullion cubes and 1 cup of pasta to a zip lock baggie or store in a glass jar. When you’re ready to cook, add the contents to 5 cups of boiling water. Cook until the pasta is done. Substitute lentils or rice for the pasta for a different dinner.
